Acquacotta Festival

From Saturday 8 to Monday 17 August in Santa Fiora (GR), at the municipal stadium, the 45th edition of the Acquacotta Festival will take place. This culinary event celebrates one of the area’s many traditional specialities.

The programme for the Acquacotta Festival includes the opening of the food stalls at 12:00 for lunch and at 19:30 for dinner. The star of the festival menu will be acquacotta, a traditional dish from the lower Maremma region made with bread, vegetables – particularly onions – and other simple ingredients from the farming tradition. The secret lies in the long cooking time, which gives the fragrant soup an almost creamy texture.
