We define ourselves by producing wines of the highest quality through decades of care and discipline. our organic approach – vineyard philosophy and our dedication to quality has given us high accolades. creating unique wines which symbolize the earth from which they come has meant an unrelenting commitment thand sorting and culling the grapes so that only the best makes it to vat and barrel. cdsb is a privately-owned tuscan vineyard and wine and wellness retreat nestled in the beautiful hills of the maremma region in italy. cdsb has a geographically perfect wine terroir because we are equidistant between montalcino and bolgheri. the project was born out of an urgent need of contessa sarah to rebalance her life while she was working at gs in the late 90’s. she had decided to convert some of the blood, sweat and tears into these escapes, and in this estate in tuscany she found the place to unplug from the crazy city

Monteregio di Massa Marittima DOC Riserva

Wine Still

MONTEREGIO DI MASSA MARITTIMA DOC RISERVA The native grape of Tuscany, Sangiovese can be a very challenging wine to harness but here at Conti di San Bonifacio, the terroir and the careful discipline applied in the Cantina has paid off.A wine the colour of ruby garnet just like those Brunellos! It is no myth that when Montalcino bought grapes from other parts of Tuscany, they cornered the entire production of the Monteregio region. Now though it is an established DOC and in the glass this is a wine which gives back way more than you pay. GRAPE VARIETY Sangiovese (85%), Syrah (10%), Cabernet Franc (5%) FERMENTATION In temperature-controlled stainless steel vats at 26º-28º C AGING 18 months in second year French oak barrels. TASTING NOTES Intense red fruit along with highly pleasurable notes of incense, cloves and chocolate. Generous, densely textured and persistent on the palate with a savoury freshness which fully respects the character of the Sangiovese grape from the Monteregio hills. The well managed tannins blends perfectly with the oak, making this a complex and elegant wine with a lovely length and persistence.

AGING 50% new and 50% in second year French oak barrels. TASTING NOTES A very impressive bottle of wine for your dinner party or to enjoy with friends. This wine lends itself to classic Italian plates of ossobucco, a grilled Fiorentina steak or some Tuscan wild boar. It also pairs well with Venetian dishes such as baccala, our salted cod, orthe array of fish and octopus plates served across the Veneto. Its lasting earthy elements and minerality work hand in hand with porcini mushrooms cooked in risottos or any of the seasonal funghi you can find. We have enjoyed highlighting the velvet chocolate undertones in this wine by opening a bottle with pudding or simply with chocolate.

Pinot Grigio DOC delle Venezia

Wine Still

Our Pinot Grigio is produced in the town of Custoza in the province of Verona near Lake Garda, from a plot planted with both Pinot Grigio and Trebbianello, typical grape varieties of the Veneto area. We use the facilities of a local Cantina to ferment our own grapes and bottle the wine. Our aim was to produce a benchmark Pinot Grigio of high quality as we have done with all of our Red Wines. We have worked with the vineyard to reduce quantity, select grapes on a deeper level and take the wine to a higher standard. 90% Pinot Grigio, 10% Trebbianello FERMENTATION: At a controlled temperature of 18°C. AGEING: Aged in stainless steel tanks for 4 months on fine lees “sur lie”. TASTING NOTES: The primary fruit flavours found in our Pinot Grigio are pear, white nectarine, apple and lime. The wine has faint notes of honey, some honeysuckle and a distinct minerality. Refreshingly dry with brilliant acidity and a bitter almond note on the finish. Very well-balanced and harmonious.
